
Asian Lettuce Wraps
2 Tablespoons olive oil
1 Cup finely chopped onion
1 lb ground turkey or chicken
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 tsp garlic salt
1 12 oz bag of broccoli cole slaw (I found it near the bagged lettuce and cole slaw but had to do a bit of searching before I saw it)
1 small can drained water chestnuts
1/2 Cup Yoshida’s Teriyaki Sauce
1 teaspoon sesame oil
About 15 lettuce leaves (iceberg or butter lettuce)
1. Place oil into a large skillet or pan over medium heat. When hot, add onion and cook for 5 minutes to soften. Add ground meat, salt, pepper and garlic salt. Brown and crumble until cooked through.
2. When turkey is cooked, stir in broccoli slaw, water chestnuts, teriyaki sauce and sesame oil. Cook for another 10-15 minutes or until broccoli slaw is softened. Reduce heat to low until ready to serve. Serve large spoonfuls inside lettuce leaves.

Here's the recipe for these crostini that I posted about a little while ago. They are a very unique and tasty flavor combination. I made them with french onion soup but the soup didn't turn out great so I recommend serving them with your favorite soup instead. :)
Apple Chicken Crostini
3 T. apple jelly/"apple butter," warmed
1 T. lemon juice
2 t. shallots, minced (you could use regular onion as well)
Salt to taste
1 T. Dijon mustard
1 T. olive oil
8-12 slices baguette, sliced diagonally and toasted (I toasted them in the oven on Broil)
Spinach leaves
2 cups cooked chicken, thinly sliced
1 Braeburn, Fuji or Gala apple, thinly sliced
Whisk jelly, lemon juice, shallots, and salt together in a bowl. In a second bowl, whisk Dijon and oil together. Brush one side of each slice of toasted baguette with mustard mixture, then top with spinach, chicken, and apple. Glaze with apple jelly mixture.

Nice. I am going to go ahead and publicly declare that I think you're ready to have another baby. After your stellar performance where you saved the day last week, and seeing the amazing food you're making, and how great you and Kate get along, I'm just saying you're ready.
(I hope anyone who reads this realizes I am just being kind of funny (but serious), and that it doesn't mean anything about you really having another child in the near future.)

Looking at this picture reminds me of Asians. Doesn't it seem like with Asians you always see the same few ones over and over again?
Yes we'll definitely have to start doing playdates once we move. Speaking of which? Where do you guys live? Close to U of U I assume? James will be working in Research Park just east of campus right up against the mnt. Do you have any suggestions for me about good neighborhoods or complexes? I would appreciate any input!
